High-Protein White Beans Soup

Episode 2 of the Winter Warmers Series, this is a simple, high-protein white bean soup made in a cast iron pan. Fast, comforting, and done in minutes — perfect for cold winter days.
Instructions
- Heat olive oil in a cast iron pan. Once hot, add a few cumin seeds and sauté until fragrant. Then, add the chopped garlic and onion and cook until softened.
- Add the mushrooms, jalapeño, and red bell pepper to the pan. Sauté for 2–3 minutes until slightly tender.
- Stir in the chopped tomato, salt, turmeric, cumin–coriander powder, and the optional tomato paste. Cook for another minute, stirring well to combine the spices.
- Add the rinsed white beans and water to the pan. Bring the mixture to a gentle simmer and let it cook for 2–3 minutes to allow the flavors to meld.
- Garnish the soup with fresh cilantro and serve warm.
