Instructions

  1. Heat olive oil in a cast iron pan. Once hot, add a few cumin seeds and sauté until fragrant. Then, add the chopped garlic and onion and cook until softened.
  2. Add the mushrooms, jalapeño, and red bell pepper to the pan. Sauté for 2–3 minutes until slightly tender.
  3. Stir in the chopped tomato, salt, turmeric, cumin–coriander powder, and the optional tomato paste. Cook for another minute, stirring well to combine the spices.
  4. Add the rinsed white beans and water to the pan. Bring the mixture to a gentle simmer and let it cook for 2–3 minutes to allow the flavors to meld.
  5. Garnish the soup with fresh cilantro and serve warm.
