This sprouted moong bean egg flatbread is a nutritious, protein-packed recipe that is perfect for breakfast, brunch, or a light meal. It uses home-sprouted moong beans, fresh dill, onion, eggs, and a little cheddar cheese to create a crispy, savory flatbread that is filling and full of flavor. Sprouted moong beans are easier to digest and naturally rich in plant protein and fiber. Combined with eggs and cheese, this recipe keeps you full for longer and tastes amazing without using any flour. You can enjoy this flatbread on its own or serve it with yogurt, chutney, or a fresh salad.
Instructions
- In a mixing bowl, toss together the sprouted moong beans, chopped onion, fresh dill, and habanero.
- Add the 3 eggs, shredded cheddar, garlic powder, salt, and pepper. Stir well until the sprouts are evenly coated in the egg mixture.
- Heat olive oil in a skillet over medium heat.
- Pour the mixture into the pan, spreading it out evenly into a flatbread shape.
- Cover with a lid and cook for 2β3 minutes until the bottom is a deep golden brown.
- Carefully flip the flatbread, cover again, and cook for another 2β3 minutes.
- Flip one final time and cook uncovered for about 40-50 seconds to crisp up the edges.
- Slide it out of the pan, cut and serve hot with a side of hot sauce, ketchup, or your favorite dip.
