Instructions
- Peel and grate 3 apples and add them to a saucepan with 1 teaspoon cinnamon. You don't need to add water—the grated apples release their own moisture as they cook. Cook over medium-low heat for about 12–15 minutes, stirring continuously, until the apples become very soft and mushy. Remove from the heat and allow to cool. Meanwhile, preheat your oven to 350°F (180°C). You only need ½ cup of applesauce for this recipe; refrigerate any extra for another recipe, breakfast, or snack.
- In a mixing bowl, combine 1 cup sprouted rolled oats, ½ cup cooled homemade applesauce, and 2 tablespoons maple syrup. Add ½ teaspoon cinnamon and ½ teaspoon vanilla extract if using. Mix thoroughly until the oats are evenly coated and the mixture comes together. The mixture will be moist at this stage.
- Let the mixture rest for 10 minutes so the oats absorb the moisture.
- Place a round cookie cutter on a lined baking tray and fill it with a portion of the mixture. Press the mixture down firmly with the back of a spoon or your fingers, then gently lift the cutter to release a neat, round cookie. Repeat with the remaining mixture to make 12 evenly sized cookies.
