This cauliflower omelet is a low-carb, high-protein breakfast that is light yet nourishing. Sliced cauliflower florets are lightly cooked in a pan with a little water, then eggs are added and gently cooked on low to medium heat. Instructions

  1. Slice cauliflower florets (about 1 cup).
  2. Heat a pan on low to medium heat.
  3. Arrange cauliflower in a round shape, leaving space in the center.
  4. Drizzle olive oil and add 2–3 tablespoons water.
  5. Cover and cook for 2 minutes.
  6. Pour 1 whisked egg around the cauliflower.
  7. Crack 1 egg into the center.
  8. Add salt and crushed pepper.
  9. Sprinkle cilantro leaves around the yolk.
  10. Cover and cook for 2–3 minutes, until the egg starts to set.
  11. Flip once carefully.
  12. Cook another 2–3 minutes on low to medium heat.
  13. Flip again if needed and serve warm.
