Mushroom and Asparagus Stir-Fry

Looking for a fresh and healthy meal idea? This 10-minute Stir-Fry is just the thing! It’s a delicious gluten-free and vegan recipe using mushrooms, asparagus, and garlic. You can enjoy the savory stir-fry on its own, or toss it with quinoa, rice or flatbread.
Instructions
- Wash mushrooms and asparagus.
- Boil 2 cups of water, add a few drops of oil and salt.
- In a wok, heat 1 tbsp olive oil.
- Pat mushrooms dry with a paper towel to reduce water release during stir-frying.
- Add chopped asparagus and blanch for 2 minutes.
- Add chopped garlic and (optional) green chili. Do not brown the garlic.
- Slice asparagus on a diagonal into thin strips.
- Strain and set aside.
- Add mushrooms and stir-fry on medium to high heat until they release water and begin to soften.
- Add blanched asparagus, salt, Italian seasoning, and chili flakes. Mix and cook briefly.
- Serve hot as a standalone stir-fry.
