Looking for a fresh and healthy meal idea? This 10-minute Stir-Fry is just the thing! It’s a delicious gluten-free and vegan recipe using mushrooms, asparagus, and garlic. You can enjoy the savory stir-fry on its own, or toss it with quinoa, rice or flatbread.

Instructions

  1. Wash mushrooms and asparagus.
  2. Boil 2 cups of water, add a few drops of oil and salt.
  3. In a wok, heat 1 tbsp olive oil.
  4. Pat mushrooms dry with a paper towel to reduce water release during stir-frying.
  5. Add chopped asparagus and blanch for 2 minutes.
  6. Add chopped garlic and (optional) green chili. Do not brown the garlic.
  7. Slice asparagus on a diagonal into thin strips.
  8. Strain and set aside.
  9. Add mushrooms and stir-fry on medium to high heat until they release water and begin to soften.
  10. Add blanched asparagus, salt, Italian seasoning, and chili flakes. Mix and cook briefly.
  11. Serve hot as a standalone stir-fry.
