This quick egg & mushroom sandwich is a healthy and delicious breakfast, ready in just 3 minutes, perfect for busy mornings. Made with simple ingredients like egg, mushroom, onion, chili, and cheese, it’s a filling and tasty meal for anytime of the day.

Instructions

  1. Crack the egg into a bowl, add chopped onion, chopped mushroom, green chili (if using), fresh coriander, salt, and pepper.
  2. Whisk the mixture well. Heat 1 tbsp olive oil in a pan and pour the egg mixture into it.
  3. Immediately place 2 bread slices on top of the cooking egg mixture and press lightly so the egg sticks to the bread.
