A simple blend of quinoa, bananas, yogurt, and seeds turns into a nourishing loaf that’s perfect for breakfast or snacking.

Instructions

  1. Rinse 1 cup quinoa well, then cook with 1.5 cups water. Simmer until water is absorbed.
  2. Let the cooked quinoa rest covered for 5 minutes, then fluff with a fork. Cool slightly.
  3. In a blender or food processor, add the cooled cooked quinoa, bananas, yogurt, oil, egg, chia seeds, flaxseed, and salt. Blend until smooth.
  4. If using baking soda, mix it in now with a squeeze of lemon juice for a fluffier bread.
  5. Pour the batter into a lined loaf pan. Bake in a preheated oven at 350°F (175°C) until the center is set and a toothpick comes out clean.
  6. Let the loaf cool completely before slicing.
