These flourless, high-protein quinoa and kidney bean patties are a simple plant-based recipe designed to be filling and easy to prepare for busy weekdays. Made with wholesome ingredients like quinoa, kidney beans, and purple cabbage, they are lightly spiced and pan-fried until crispy on the outside and soft on the inside. The quinoa is cooked with savory spices and tomato to absorb deep flavor, then mixed with mashed kidney beans for plant protein and structure, and finely chopped purple cabbage for crunch, fiber, and natural color. Instructions
- Rinse quinoa thoroughly under running water. In a pot, combine the rinsed quinoa, 1.75 cups water, 1 tsp olive oil, 1 tsp oregano, ½ tsp salt, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp chili flakes (optional), and 1 medium chopped tomato. Bring to a simmer, then cover and cook until the water is fully absorbed. Let the cooked quinoa rest for 5-10 minutes, then fluff with a fork.
- While the quinoa rests, prepare the Greek yogurt hemp heart dip. In a small bowl, combine ½ cup Greek yogurt, ¼ cup hemp hearts, 1 grated garlic clove, 1 tbsp olive oil, ¼ tsp salt, and 1 tbsp lime juice. Add optional purple cabbage juice for color swirl or paprika/Sriracha for spice, if desired. Mix well and set aside.
- In a large bowl, combine the fluffed quinoa base, 250 g mashed cooked kidney beans, ⅓ cup finely chopped and squeezed dry purple cabbage, a pinch of turmeric, ½ tsp paprika, and ½ tsp black pepper. Mix thoroughly until all ingredients are well combined and the mixture can hold its shape.
- Divide the mixture into 16 equal portions and shape each portion into a round patty, approximately 1.5 to 2 inches in diameter.
- Heat a large non-stick pan over medium heat. Place the patties in the pan, ensuring not to overcrowd it. Cook for 3-5 minutes per side, or until golden brown and crisp on both sides. Cook in batches if necessary.

Protein Base: Kidney beans can be substituted with chickpeas, black beans, lentils, or mixed beans. Quinoa can be replaced with brown rice, millet, or cooked oats (texture will change slightly but still works well).

Soaking Quinoa: Quinoa can be soaked for 1–2 hours before cooking. This is optional but helps improve texture and makes it slightly fluffier. Always rinse thoroughly under running water to remove natural saponins that can cause bitterness.
Cooking Quinoa Properly: Do not over-stir while cooking. Once water is added, let it simmer covered until fully absorbed. After cooking, always let it rest for 5–10 minutes before fluffing. This step helps prevent mushy texture and improves binding for patties.
Bean Preparation: If using dry kidney beans, soak overnight and cook until completely soft (about 30 minutes). If using canned beans, rinse well and drain thoroughly to remove excess moisture and sodium.
Cabbage Handling: Squeeze the chopped purple cabbage firmly before mixing. This step is important because excess moisture can break the patty structure and reduce crispiness during cooking.
Shaping & Cooking: Shape into 16 equal-sized patties for even cooking. Pan-fry on medium heat until golden brown on both sides. If cooked without oil its easy to flip, but can drizzle little oil for the crispiness. Avoid overcrowding the pan for best texture.
AIR FRY METHOD:
Preheat air fryer to 170°C.
Lightly spray or brush patties with a small amount of olive oil.
Arrange patties in a single layer without overcrowding the basket.
Air fry for 10–12 minutes, flipping halfway through, until golden and crisp on the outside.
Since the mixture is already fully cooked, this method is mainly to achieve a crisp texture while keeping the inside soft and tender.
Meal Prep & Storage:
These patties are excellent for meal prep. Store in an airtight container in the refrigerator for 4–5 days. For longer storage, freeze for up to 3 months. Reheat in an air fryer or pan for best crisp texture.
