Rice Paper Samosa

A light and crunchy twist on the traditional samosa, made with a delicious peanut-potato filling. Instead of deep frying, this healthier version uses just a little oil to pan-fry them golden and crisp. Easy to make and full of flavor, perfect with chutney or ketchup!
Instructions
- Heat 1 tbsp olive oil in a pan, roast peanuts until golden, and set aside.
- In the same pan, add cumin seeds, then chopped onion and peas. Sauté for 1–2 minutes.
- Add turmeric, salt, cumin-coriander powder, and mashed potatoes. Mix well.
- Stir in roasted peanuts, chopped coriander, and lime juice. The filling is now ready.
- Take 2 rice paper sheets (if thin). Cut from the edge to the center, fold into a cone, and seal the edges with water.
- Fill the rice paper cone with the prepared stuffing and seal the remaining edges with water to form a samosa shape.
- Heat 1–2 tbsp oil in a pan and shallow fry the samosas until golden and crispy on all sides.
- Serve hot with chutney or ketchup.
