Simple cauliflower curry made with fresh cauliflower florets simmered in a mild tomato, onion, garlic, and ginger base. This easy homemade vegetable curry is light, comforting, and perfect for a simple everyday meal.

Instructions

  1. Cut the cauliflower into bite-size florets and wash well.
  2. Pour hot water over the florets, cover, and let sit for 10 minutes.
  3. Blend tomato and green chilies with a little water to make a puree.
  4. Heat olive oil in a pan and add cumin seeds.
  5. Once they crackle, add onion, garlic, and ginger and sautΓ© 2–3 minutes.
  6. Add the tomato puree and bring to a boil.
  7. Add turmeric powder, salt, and cumin-coriander powder.
  8. Cook the masala 5–6 minutes until it thickens and starts releasing oil.
  9. Drain the cauliflower.
  10. Add the blanched cauliflower and mix well.
  11. Add a little water and cook 3–4 minutes until the cauliflower is tender.
  12. Garnish with fresh chopped cilantro.
