Simple Cauliflower Curry

Simple cauliflower curry made with fresh cauliflower florets simmered in a mild tomato, onion, garlic, and ginger base. This easy homemade vegetable curry is light, comforting, and perfect for a simple everyday meal.
Instructions
- Cut the cauliflower into bite-size florets and wash well.
- Pour hot water over the florets, cover, and let sit for 10 minutes.
- Blend tomato and green chilies with a little water to make a puree.
- Heat olive oil in a pan and add cumin seeds.
- Once they crackle, add onion, garlic, and ginger and sauté 2–3 minutes.
- Add the tomato puree and bring to a boil.
- Add turmeric powder, salt, and cumin-coriander powder.
- Cook the masala 5–6 minutes until it thickens and starts releasing oil.
- Drain the cauliflower.
- Add the blanched cauliflower and mix well.
- Add a little water and cook 3–4 minutes until the cauliflower is tender.
- Garnish with fresh chopped cilantro.
