A sweet, tangy, and fiery pickle made with habanero and green chilies, perfectly balanced with ginger, garlic, tamarind, and sesame. It’s great with rice and flatbreads, making every meal exciting.
Instructions
- Slice habanero, green chilies, ginger, and garlic. Keep aside.
- Heat canola oil in a pan. Add fenugreek, mustard, cumin, and fennel seeds. Let them crackle.
- Mix in cumin-coriander powder and roasted sesame seeds.
- Add olive oil and vinegar, mix well.
- Transfer to a sterilized airtight glass jar. Keep refrigerated.
- Add sliced chilies, ginger, and garlic. Sprinkle in salt and turmeric. Cover and cook for 5β6 minutes on medium heat.
- Let mixture cool slightly. Blend to your desired texture (smooth or coarse).
- Stir in jaggery and tamarind. Cook for another 5 minutes until everything softens.
- Switch off the flame.
