This is a healthier way of making noodles with seafood mushrooms. Instead of cooking noodles plain, fresh vegetables are first sautéed until all the moisture dries up. This small step adds a lot of flavor and makes the noodles feel lighter and more satisfying. Seafood mushrooms add a great texture, extra volume, and a mild umami taste without making the dish heavy. A little sriracha at the end brings everything together beautifully. This noodle bowl is quick, comforting, and perfect for busy days when you still want something warm and nourishing.

Instructions

  1. Wash the seafood mushrooms well, trim the ends, and chop them in half.
  2. Heat 1 tablespoon olive oil in a pan.
  3. Finish with sriracha sauce as per taste.
  4. Add chopped onion, seafood mushrooms, and tomatoes to the pan.
  5. Serve hot and enjoy, optionally garnished with spring or green onion.
  6. Sauté for 5–6 minutes until all the moisture from the vegetables dries up.
  7. Add 1.5 cups water and bring it to a boil.
  8. Add noodles and the seasoning packet to the boiling water.
  9. Boil for 2–3 minutes until the noodles are just cooked. Do not overcook.
