Indulge in this warm, comforting, flavour-packed Shredded Oyster Mushroom Stir Fry. It’s super quick, needs only a handful of ingredients, and transforms plain oyster mushrooms into something crispy, savoury, and addictive. I love enjoying it with bread, but it goes perfectly with rice, noodles, wraps, or flatbreads.

Instructions

  1. Shred the oyster mushrooms using a fork into thin strips.
  2. Heat 1 tbsp oil on medium-high heat in a pan. Add the shredded mushrooms and sauté for 2–3 minutes.
  3. Garnish with fresh spring onions and serve warm.
  4. In a small bowl, mix all the sauce ingredients: soy sauce, hot sauce, ketchup (optional), vinegar or lime juice, sesame seeds, chili flakes, and water.
  5. Add the sliced onions and salt to the pan. Continue to cook until the moisture dries up and the mushrooms turn slightly crisp at the edges.
  6. Pour the prepared sauce into the pan with the mushrooms and onions.
  7. Toss everything well until the mushrooms and onions are evenly coated and glossy.
