Growing up, these rustic flatbreads were a staple in our kitchen. They were my mom’s clever (and delicious) way of making sure we ate our vegetables every single day. They are quick, flourless, and hold so many memories of busy mornings and cozy dinners.

Today, I’m sharing this piece of my childhood with you. It’s a simple, gluten-free option that works perfectly as a morning wrap or a healthy side for dinner. I love to just break it apart and eat it while it’s warm. Enjoy the quiet process.

Instructions

  1. Grate zucchini; mix with salt and spices. Let sit for 1 minute to release juices.
  2. Stir in yogurt and oat flour until a thick dough forms.
  3. Heat stainless steel pan with olive oil over medium heat.
  4. Shape: Wet hands with water and press dough into the pan.
  5. Cook: Cover with a lid and cook for 2-3 minutes.
  6. Flip: Remove lid, flip, and cook the other side for 2-3 minutes until gold and crispy.
  7. Serve: Let it firm up for a minute, then break and enjoy!
