This rice paper omelet is the fastest, crunchiest, and healthiest breakfast you can make this week. It only takes 5 minutes and uses my trick of a double-flip for that perfect, addictive crispiness! It’s savory, satisfying, and uses minimal ingredients. Perfect for busy mornings!

Instructions

  1. Lightly spray your pan and place two thin rice papers one over the other.
  2. Crack one egg in the middle of the papers.
  3. Add sliced cherry tomatoes and season with salt and pepper.
  4. Cover with two more rice papers to seal the egg mixture inside.
  5. Cook on medium heat for 1–2 minutes until the egg is mostly set.
  6. Flip the omelet. Cook for another 1-2 mins.
  7. Flip it a second time for another minute for extra crispiness!
  8. Serve immediately and enjoy the crunch!
