This rice paper omelet is the fastest, crunchiest, and healthiest breakfast you can make this week. It only takes 5 minutes and uses my trick of a double-flip for that perfect, addictive crispiness! It’s savory, satisfying, and uses minimal ingredients. Perfect for busy mornings!
Instructions
- Lightly spray your pan and place two thin rice papers one over the other.
- Crack one egg in the middle of the papers.
- Add sliced cherry tomatoes and season with salt and pepper.
- Cover with two more rice papers to seal the egg mixture inside.
- Cook on medium heat for 1–2 minutes until the egg is mostly set.
- Flip the omelet. Cook for another 1-2 mins.
- Flip it a second time for another minute for extra crispiness!
- Serve immediately and enjoy the crunch!
