A hearty and wholesome one-pot meal — Tofu Tadka Masoor Pulao — a delicious mix of protein-rich red lentils, tofu, rice, and spinach, cooked with Indian spices and topped with butter. It’s easy, flavorful, and perfect for cozy Canadian weeknights!

Instructions

  1. Toss tofu cubes with corn flour, salt, and pepper.
  2. Shallow-fry in a pan until golden on all sides. Set aside.
  3. Heat oil and butter in a pot.
  4. Add sliced onions and sauté until golden brown.
  5. Add crushed garlic, ginger, and green chilies. Sauté for a minute until aromatic.
  6. Now add soaked whole red lentils. Stir and cook for 2–3 minutes.
  7. Add tomato paste and mix well.
  8. Add soaked rice and stir gently to combine.
  9. Sprinkle turmeric, cumin-coriander powder, and salt.
  10. Pour in water, bring to a boil.
  11. Add chopped spinach on top (do not stir).
  12. Cover the lid and cook on low heat for 15 minutes or until rice is fully cooked and water is absorbed.
  13. Once rice is done, gently fluff it.
  14. Add the fried tofu on top.
  15. Serve warm with yogurt, salad, or pickle on the side.

💡 Chef’s Notes

You can add a dash of lemon juice or garam masala before serving for extra flavor.
This dish is great for meal prep and stays well in the fridge for 2–3 days.
