Tofu Stir Fry with Asparagus & Mushrooms

A perfect high-protein stir fry packed with flavor, crunch, and color!
Instructions
- Prep all veggies and tofu before starting.
- Heat olive oil in a large non-stick pan or wok on medium-high flame.
- Add cumin, green chili (optional for heat).
- Sauté onions till slightly soft.
- Add ginger and garlic, sauté for another 30 seconds until fragrant.
- Toss green beans and stir fry for 2-3 mins to avoid rawness.
- Add tofu cubes and all other veggies and cook until golden brown on all sides.
- Add soy sauce, ketchup and lemon juice or vinegar.
- Add little water to make more saucy.
- Cook for 1–2 minutes more until everything is well-coated.
- Garnish with spring onions and serve hot!
