Instructions
- Blend 3 cups of oats into a fine flour.
- Pulse 150g of fresh spinach and strain to extract the juice. Reserve the spinach pulp for the filling.
- In a bowl, combine the oat flour with the spinach juice and plain water, adding liquid little by little until a soft, non-sticky dough forms. The total liquid needed is approximately 1.5 cups.
- Take the reserved spinach pulp and season it with salt to taste. This will be the filling for the stuffed buns.
- For the Cucumber Yogurt Dip: In a separate bowl, combine 1 cup of yogurt with 3 small chopped cucumbers. Season with salt, black pepper, and chili flakes to taste. Mix well and set aside.
- Divide the dough into portions. Use a portion to roll out 12 flatbreads.
- Take the remaining dough and fill it with the seasoned spinach pulp to form 2 stuffed buns.
- Heat a pan and drizzle with olive oil. Cook the flatbreads and stuffed buns on the pan until golden brown on both sides.
- Serve the warm oats flatbreads and stuffed buns immediately with the refreshing cucumber-yogurt dip.
