Instructions

  1. Blend 3 cups of oats into a fine flour.
  2. Pulse 150g of fresh spinach and strain to extract the juice. Reserve the spinach pulp for the filling.
  3. In a bowl, combine the oat flour with the spinach juice and plain water, adding liquid little by little until a soft, non-sticky dough forms. The total liquid needed is approximately 1.5 cups.
  4. Take the reserved spinach pulp and season it with salt to taste. This will be the filling for the stuffed buns.
  5. For the Cucumber Yogurt Dip: In a separate bowl, combine 1 cup of yogurt with 3 small chopped cucumbers. Season with salt, black pepper, and chili flakes to taste. Mix well and set aside.
  6. Divide the dough into portions. Use a portion to roll out 12 flatbreads.
  7. Take the remaining dough and fill it with the seasoned spinach pulp to form 2 stuffed buns.
  8. Heat a pan and drizzle with olive oil. Cook the flatbreads and stuffed buns on the pan until golden brown on both sides.
