It is then mixed with mashed kidney beans for plant protein and binding, along with finely chopped purple cabbage for crunch, color, and fiber. The mixture is shaped into balls and cooked until golden and crisp.

To complete the meal, these balls are served with a creamy Greek yogurt dip mixed with hemp hearts, garlic, olive oil, and lime juice, finished with a swirl of purple cabbage juice for natural color.

Instructions

  1. Soak 1 cup of quinoa in water for 1–2 hours (optional but improves texture). Rinse thoroughly under cold running water to remove saponins.
  2. Heat 1 tsp olive oil in a pan. Add oregano, garlic powder, onion powder, salt, and chili flakes. Add chopped tomato and sauté for 2–3 minutes until soft.
  3. Add rinsed quinoa and roast for 2 minutes. Add water, cover, and cook for 20–25 minutes until absorbed. Rest 5–10 minutes, then fluff.
  4. If using canned beans, rinse and mash lightly. If using dry beans, soak overnight and cook for 30 minutes until soft.
  5. Combine the cooked quinoa, mashed kidney beans, and squeezed purple cabbage. Add spices and mix until cohesive.
  6. Shape the mixture into 24 balls. Optionally, roll them in extra cabbage for crunch.
  7. Choose your cooking method:
    Air Fry Method: Preheat to 170°C. Air fry for 12 minutes, flipping halfway.
    Oven Method: Bake at 200°C for 15–18 minutes, flipping halfway.
    Pan Fry Method: Add 2–3 tbsp chickpea flour to the mixture for binding. Pan fry 2–3 minutes per side.
  8. Whisk together Greek yogurt, hemp hearts, grated garlic, olive oil, salt, and lime juice for the dip. Add a swirl of purple cabbage juice for color.
