Warm Asparagus Winter Salad with Honey-Lemon Seed Dressing

This simple, nourishing warm salad is a perfect break from heavy winter meals. It features tender asparagus, boiled potatoes, fresh veggies, and a lightly sweet honey-lemon seed dressing. Ideal as a light meal, side dish, or when you crave something warm but not heavy. It’s made with easy ingredients, quick to cook, and very comforting.
Instructions
- Wash asparagus, trim the ends, slit thick stalks, and cut into 1-inch pieces.
- Peel and dice one boiled potato into small cubes.
- Dry roast sesame, flax, and pumpkin seeds (1 tbsp each) in a pan. Keep aside.
- In the same pan, sauté asparagus with a little olive oil and salt until just tender.
- In a bowl, combine the sliced onion, cherry tomatoes, carrot, diced potatoes, and sautéed asparagus.
- Blend the roasted seeds with olive oil, honey, lemon juice, salt, and a little water if needed, to create the dressing.
- Pour the dressing over the salad and mix well to combine all ingredients.
- Top with extra pumpkin seeds or nuts of your choice. Serve warm.
