This High-Protein Vegan Tofu Salad brings together crispy air-fried smashed tofu, juicy watermelon, creamy avocado, crunchy pecans and pumpkin seeds, fresh cucumber and mixed salad greens. The combination of savoury, crispy tofu and sweet watermelon makes this salad surprisingly delicious and refreshing. Everything is finished with a creamy, zesty homemade hemp heart dressing made with lemon, garlic, ginger, olive oil and hemp hearts. It’s a satisfying plant-based meal with approximately 32 g of protein and 11 g of fiber per serving. Perfect for a refreshing summer lunch, light dinner, or whenever you want a salad that actually keeps you satisfied.

Instructions

  1. Add olive oil, lemon juice and zest, garlic, ginger, salt, garlic powder, onion powder, honey and hemp hearts to a blender or food processor. Blend until combined. Set aside.
  2. Pat the extra-firm tofu very dry. Smash it into irregular pieces rather than cutting it into cubes.
  3. Add soy sauce, sriracha, ketchup, Karahi Masala or any garam masala or cumin coriander powder, salt and olive oil to the smashed tofu. Mix well so the tofu is evenly coated.
  4. Air fry at 180°C (350°F) for about 15 minutes, stirring or tossing 3-4 times through so the tofu gets crispy and crunchy on different sides.
  5. While the tofu cooks, chop the cucumber, watermelon and avocado.
  6. Add the mixed greens, watermelon, cucumber, pecans, pumpkin seeds and crispy tofu to a bowl.
  7. Pour over the hemp dressing and toss everything together.
  8. Top with a little extra pecans and pumpkin seeds if desired.

💡 Chef’s Notes

Dry the tofu well: The drier the tofu, the better it will crisp up in the air fryer. Press or pat the tofu thoroughly before smashing it. Keep the tofu pieces irregular: Don’t worry about making them uniform. The different edges and textures help create those delicious crispy bits. Don’t overcrowd the air fryer: Spread the tofu out as much as possible so the hot air can circulate and crisp it evenly. Toss halfway through: Give the tofu a good stir or toss around the halfway point for more even browning and crunch. Adjust the dressing: Taste the hemp dressing before adding it to the salad. Add a little more lemon for brightness, honey for sweetness, or salt if needed. Add the tofu just before serving: This keeps the tofu crispy instead of letting it soften from the dressing and watermelon. Customize the crunch: Pecans and pumpkin seeds work beautifully here, but you can also use walnuts, cashews or sunflower seeds. Make it ahead: Prepare the dressing, vegetables and tofu separately and assemble just before eating. This is especially helpful if you’re meal-prepping. For extra crunch: Add a few more toasted pecans or pumpkin seeds on top just before serving. Make it vegan: Replace the honey in the dressing with maple syrup or agave. Enjoy immediately while the tofu is crispy!
