High-Protein Chickpea Crackers
These High-Protein Pink Chickpea Crackers offer a clean, whole-food plant-based snack, packing over 53 grams of plant protein per batch. Unlike traditional flour-based or seed-heavy crackers, this recipe utilizes raw soaked chickpeas as the primary protein source, complemented by nutrient-dense flaxseeds and sesame seeds. Free from flours, protein powders, eggs, and preservatives, these crackers are made from whole-food ingredients that are blended, rolled thin, and baked to crispy perfection. Ideal for hitting daily macros, meal-prepping, or an energizing afternoon bite, they provide crunch, fiber, and serious plant fuel. The protein primarily comes from 1 cup dry chickpeas (~39g), 4 tbsp flax seeds (~7.5g), 3 tbsp sesame seeds (~5.0g), and 1 medium beet (~1.5g).
Instructions
- Add the soaked, raw chickpeas, boiled beet, olive oil, and beet water into a high-speed blender or food processor. Blend until completely smooth and creamy, scraping down the sides.
- Transfer the vibrant pink dough to a bowl. Stir in the flax seeds, garlic powder, onion powder, salt, and oregano until fully combined.
- Let the dough sit for 20–30 minutes. The flaxseeds will absorb moisture and release natural mucilage, transforming the soft purée into a pliable, rollable dough without needing flour.
- Preheat oven to 350°F (175°C). Divide the dough into two equal halves. Place one half between two sheets of parchment paper. Roll out evenly as thin as possible (~1.5 mm).
- Peel off the top parchment. Scatter 1.5 tbsp of sesame seeds over the surface and press them lightly into the dough with the rolling pin. Repeat for the second sheet. Use a pizza wheel or knife to score the dough very gently into small square bite-sized crackers (~40–50 per sheet).
- Bake both sheets at 350°F (175°C) for 30–35 minutes.
- Turn off the oven. If the edges are crisp but the middle feels slightly pliable, flip the center crackers over. Leave the trays inside the turned-off oven with the door slightly ajar for 10–15 minutes to dehydrate and snap.
- Let cool completely at room temperature, then break along the scored lines into crisp crackers.
