Discover a new way to enjoy tofu with this easy, high-protein spicy tofu sandwich. The secret lies in freezing the tofu first, which transforms its texture into a porous, sponge-like consistency, allowing it to absorb flavors beautifully. After tearing into bite-sized pieces and freezing, the tofu is quickly thawed with boiling water and squeezed to remove excess moisture. It\’s then pan-fried until golden, coated in a savory and spicy glaze made from soy sauce, sriracha, ketchup, and apple cider vinegar, and finished with toasted sesame seeds. Serve this flavorful tofu on your favorite bread with fresh lettuce and a plant-based dip for a quick and exciting meal, perfect for lunch, dinner, or meal prep.

Instructions

  1. Tear the 300 g tofu into bite-sized pieces.
  2. Freeze the tofu pieces until completely frozen. You can freeze them ahead of time so they are ready whenever you want to make this recipe.
  3. When ready to cook, place the frozen tofu in a bowl and pour boiling water over it.
  4. Let it thaw for about 3–4 minutes.
  5. Squeeze the tofu well to remove as much water as possible. You will notice that the tofu has a more porous, sponge-like texture.
  6. Heat a pan and add the squeezed tofu directly to the pan.
  7. Drizzle 1 tbsp olive oil over the tofu and cook, flipping occasionally, until lightly golden and browned on both sides.
  8. Add the soy sauce, sriracha, ketchup and apple cider vinegar directly to the pan.
  9. Toss everything together and cook for another 2–3 minutes until the tofu is well coated with the spicy glaze.
  10. Finish with 1 tbsp toasted black and white sesame seeds.
  11. Add the spicy tofu to your favourite bread with fresh lettuce and your favourite plant-based dip or spread.
  12. Enjoy!

💡 Chef’s Notes

For best results, ensure the tofu is completely frozen to achieve the desired porous texture. Tear the tofu into bite-sized pieces before freezing to avoid cutting frozen tofu. Use boiling water for a quick thaw (3-4 minutes) and squeeze the tofu thoroughly to remove as much water as possible, allowing it to better absorb the sauce. Add the squeezed tofu to a hot pan before drizzling with olive oil, and brown it lightly on both sides before adding the sauce for optimal texture and flavor absorption. The sauce should be added at the end. This recipe is excellent for meal prep as the tofu can be frozen ahead of time, making the active cooking process only about 10 minutes.
