Healthy Bitter Melon Potato Curry | Great for Blood Pressure | Karela Aloo Sabji
🏠 Cuisine: Indo-Nepali 🍽️ Course: Main Course 👥 Servings: 4
Today, I’m making a simple and healthy Karela Aloo Sabji (potato recipe)— a comforting Indo-Nepali style bitter melon and potato curry. Karele (bittergourd) is known for its amazing health benefits, especially for blood pressure, digestion, and blood sugar balance. In this recipe, I balance the bitterness with soft potatoes, spices, and a tomato base. It’s quick to make and tastes absolutely delicious when cooked just right! If you’re looking for healthy Indo-Nepali vegetarian meals with very little oil, this is a must-try!
Instructions
- Wash all the vegetables thoroughly.
- Slice the bitter melon and potato to match the slices.
- Chop green chilies. Roughly chop tomatoes and make a paste with the green chili.
- Heat oil in a pan, add cumin seeds and let them sizzle until fragrant.
- Add the sliced bitter melon to the pan and sauté until golden brown. Remove and keep aside.
- In the same pan, add the sliced potatoes and a little turmeric powder. Sauté until cooked through and golden brown.
- Transfer the cooked potatoes to the bowl with the bitter melon.
- Add the tomato paste (or ground tomatoes with chili) to the same pan and simmer. Cook until it releases oil and the raw smell disappears.
- Add the cooked bitter melon and potatoes back into the tomato base. Mix well and cook until everything is well combined and the curry leaves the pan.
- Sprinkle sesame seeds on top for added flavor and crunch.
- Transfer the curry to a bowl and serve hot with roti or rice.
