This Is How Asparagus Became My Comfort Food. Today I took a break from soup and made this simple, nourishing warm salad. It has asparagus, boiled potatoes, fresh veggies, and a lightly sweet honey-lemon seed dressing. Perfect as a light meal, side dish, or when you want something warm but not heavy. Easy ingredients, quick cooking, and very comforting.
Instructions
- Wash asparagus, trim the ends, slit thick stalks, and cut into 1-inch pieces.
- Peel and dice one boiled potato into small cubes.
- Dry roast sesame, flax, and pumpkin seeds (1 tbsp each). Keep aside.
- In the same pan, sauté asparagus with a little olive oil and salt until just tender.
- In a bowl, add sliced onion, cherry tomatoes, carrot, potatoes, and sautéed asparagus.
- Blend roasted seeds with olive oil, honey, lemon juice, salt, and a little water if needed.
- Pour the dressing over the salad and mix well.
- Top with extra pumpkin seeds or nuts of your choice. Serve warm.
