This Is How Asparagus Became My Comfort Food. Today I took a break from soup and made this simple, nourishing warm salad. It has asparagus, boiled potatoes, fresh veggies, and a lightly sweet honey-lemon seed dressing. Perfect as a light meal, side dish, or when you want something warm but not heavy. Easy ingredients, quick cooking, and very comforting.

Instructions

  1. Wash asparagus, trim the ends, slit thick stalks, and cut into 1-inch pieces.
  2. Peel and dice one boiled potato into small cubes.
  3. Dry roast sesame, flax, and pumpkin seeds (1 tbsp each). Keep aside.
  4. In the same pan, sauté asparagus with a little olive oil and salt until just tender.
  5. In a bowl, add sliced onion, cherry tomatoes, carrot, potatoes, and sautéed asparagus.
  6. Blend roasted seeds with olive oil, honey, lemon juice, salt, and a little water if needed.
  7. Pour the dressing over the salad and mix well.
  8. Top with extra pumpkin seeds or nuts of your choice. Serve warm.
