Air-fried cauliflower layered with a fresh veggie mix, seeds, milk, and mozzarella — this no-egg binding method creates a soft, crunchy, cheesy bake. So simple and so satisfying!

Instructions

  1. Cut 500g cauliflower into pieces. Season with salt, red chili powder, garlic powder, and 1 tbsp oil.
  2. Air-fry the seasoned cauliflower at 170°C for 15 minutes, turning halfway.
  3. While the cauliflower is cooking, chop all the veggies: mushrooms, peppers, jalapeño, spring onion, and tomato.
  4. Add all chopped veggies to a bowl. Tear in 1 slice of bread.
  5. Add olive oil, salt, pepper, chia seeds, flax seeds, milk, chili powder, and garlic powder to the bowl. Mix well.
  6. Add some mozzarella cheese to the veggie mix and stir to combine.
  7. Spread the prepared veggie mixture evenly over the cooked cauliflower in the air fryer.
  8. Air-fry for 5 minutes.
  9. Add more mozzarella cheese on top and air-fry again until it melts, approximately 3 minutes.
  10. Serve warm and enjoy the cheesy, soft–crunchy layers!
