Airfried Cheesy Cauliflower

Air-fried cauliflower layered with a fresh veggie mix, seeds, milk, and mozzarella — this no-egg binding method creates a soft, crunchy, cheesy bake. So simple and so satisfying!
Instructions
- Cut 500g cauliflower into pieces. Season with salt, red chili powder, garlic powder, and 1 tbsp oil.
- Air-fry the seasoned cauliflower at 170°C for 15 minutes, turning halfway.
- While the cauliflower is cooking, chop all the veggies: mushrooms, peppers, jalapeño, spring onion, and tomato.
- Add all chopped veggies to a bowl. Tear in 1 slice of bread.
- Add olive oil, salt, pepper, chia seeds, flax seeds, milk, chili powder, and garlic powder to the bowl. Mix well.
- Add some mozzarella cheese to the veggie mix and stir to combine.
- Spread the prepared veggie mixture evenly over the cooked cauliflower in the air fryer.
- Air-fry for 5 minutes.
- Add more mozzarella cheese on top and air-fry again until it melts, approximately 3 minutes.
- Serve warm and enjoy the cheesy, soft–crunchy layers!
