Instructions

  1. Boil potatoes and cook quinoa with 1.5 cups water until fluffy. Let rest.
  2. Cook eggplant with a little salt until soft and mash with turmeric.
  3. Add mashed potatoes and combine with eggplant.
  4. Once cooled, mix in cooked quinoa, spices, and flours.
  5. Form into 13 patties, roll in sesame seeds.
  6. Air fry at 200°C for 10 minutes or pan fry until golden.
  7. Blend dip ingredients until smooth and creamy.
  8. Serve hot with dip and enjoy the crispy goodness!
