Instructions
- Boil potatoes and cook quinoa with 1.5 cups water until fluffy. Let rest.
- Cook eggplant with a little salt until soft and mash with turmeric.
- Add mashed potatoes and combine with eggplant.
- Once cooled, mix in cooked quinoa, spices, and flours.
- Form into 13 patties, roll in sesame seeds.
- Air fry at 200°C for 10 minutes or pan fry until golden.
- Blend dip ingredients until smooth and creamy.
- Serve hot with dip and enjoy the crispy goodness!
