Nothing feels better on a chilly day than golden grilled cheese dipped in creamy tomato soup. When winter evenings call for something warm and comforting, I always go back to this timeless combo — a crispy golden grilled cheese sandwich paired with a silky, creamy tomato soup. It’s the kind of meal that makes you feel cozy, happy, and satisfied without taking too much time in the kitchen. The soup is made with roasted tomatoes, garlic, and a handful of cashews for natural creaminess (no heavy cream needed!). A touch of ketchup or honey balances the flavors beautifully. Pair that with a simple cheddar-stuffed grilled cheese, toasted in olive oil until perfectly golden, and you’ve got a hug in a bowl… and on a plate. ❤️ Perfect for cold days, quick dinners, or even a cozy weekend lunch. Try it once, and this might become your go-to comfort meal.

Instructions

  1. Heat a pan with 2 tsp olive oil, toast the bread slices until golden.
  2. In the same pan, add halved tomatoes, garlic cloves, olive oil, and salt. Cover and cook for 4–5 minutes until soft and mushy.
  3. Place cheddar cheese slices on one bread, top with the other, and toast until crispy on both sides.
  4. Add cashews and ketchup (or your sweetener of choice). Let the mixture cool slightly.
  5. Cut and set aside.
  6. Blend with ½ cup milk until smooth.
  7. Return to the pan, simmer for 2 minutes, and season with black pepper. Adjust salt if needed.
  8. Serve hot with the grilled cheese sandwich.
