A simple and healthy Karela (bitter melon) Aloo Sabji (aloo curry)— a comforting Indo-Nepali style bitter melon and potato curry. Karele (bittergourd) is known for its amazing health benefits, especially for blood pressure, digestion, and blood sugar balance. In this recipe, the bitterness is balanced with soft potatoes, spices, and a tomato base. It’s quick to make and tastes absolutely delicious when cooked just right! This is a healthy Indo-Nepali vegetarian meal with very little oil, and it’s naturally vegan.

Instructions

  1. Wash all the vegetables thoroughly.
  2. Slice the bitter melon and potato to match the slices.
  3. Chop the green chilies.
  4. If not using pre-made tomato paste, roughly chop fresh tomatoes and make a paste with the chopped green chili.
  5. Heat oil in a pan.
  6. Add cumin seeds to the hot oil and let them sizzle.
  7. Add the sliced bitter melon and sauté until golden brown. Remove from the pan and keep aside.
  8. In the same pan, add the sliced potatoes and a little turmeric powder.
  9. Sauté the potatoes until they are cooked through and golden. Transfer them to the bowl with the bitter melon.
  10. Add the tomato paste (or fresh tomato-chili paste) to the same pan and simmer.
  11. Cook the tomato paste until it releases oil and the raw smell disappears.
  12. Add the cooked bitter melon and potatoes back into the tomato base. Mix well.
  13. Continue to cook until everything is well combined and the curry starts to leave the sides of the pan.
  14. Sprinkle sesame seeds on top for added flavor and crunch.
  15. Transfer the curry to a bowl and serve hot with roti or rice.
