This healthy recipe is gluten-free, fiber-rich, and naturally sweet. Perfect for breakfast, tea-time, or even as a guilt-free dessert! Topped with crunchy walnuts and melty chocolate chips, this loaf is as delicious as it is nourishing.

Instructions

  1. Rinse 1 cup quinoa well, then cook with 1.5 cups water. Simmer until water is absorbed.
  2. Let the cooked quinoa rest covered for 5 minutes, then fluff with a fork. Cool slightly.
  3. In a blender or food processor, add cooked quinoa, bananas, yogurt, oil, egg, chia seeds, flaxseed, and salt. Blend until smooth.
  4. If using baking soda, mix it in now with a squeeze of lemon juice.
  5. Pour batter into a lined loaf pan. Bake at 350°F (175°C) in a preheated oven for 35–40 minutes, until the center is set and a toothpick comes out clean.
  6. Let cool completely before slicing.
