This recipe shows you how to make a quick and easy Lentil Soup, Bok Choy Stir fry, Rice & Tomato Chutney with simple spices. Perfect for a healthy lunch or dinner, and ready in just 20 minutes! Instructions
- Wash lentils 2-3 times in running water and soak it for 10 mins.
- Boil the lentils with 4 cups water, turmeric, and salt until soft.
- In a small pan, heat 1 tsp ghee/oil, add cumin seeds, garlic (optional), and dried chili (optional). Let it brown slightly.
- Pour the dal into the oil and simmer for 2-3 minutes.
- Rinse 1 cup of rice.
- Cook rice with 1.5 cups of water (adjust depending on rice type). Bring to a boil, then simmer covered until done. Alternatively, cook it in a rice cooker.
- Heat 2 tsp olive oil, add garlic (and green chili if using), sauté till golden.
- Add chopped Bok choy, stir well.
- Add salt to taste.
- Cook for 4-5 minutes until tender.
- Add 1 tsp olive oil and add fenugreek or cumin seeds to a pan.
- Roast tomatoes, garlic, and green chili (optional).
- Blend or mash with salt, peanut/sesame (if using), and mint.
