Instructions

  1. Heat 2 tbsp olive oil in a pot. Sauté the finely chopped garlic cloves until fragrant.
  2. Heat 2 tbsp oil in a separate pan. Sauté the chopped onion, ginger, and garlic until softened.
  3. Serve the hot White Beans Curry alongside the fluffy Garlicky Carrot Rice. Garnish with additional spring onions if desired.
  4. Add the chopped carrot and the 30-minute soaked white rice to the pot. Sauté for 2-3 minutes.
  5. Add the pulsed cauliflower and cook for 2-3 minutes.
  6. Add 1.5 cups water and salt to taste. Cover the pot and cook for 15 minutes.
  7. Then add the blended tomato and tomato paste. Cook for 5 minutes, stirring occasionally.
  8. Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before serving.
  9. Stir in 1 tsp salt, 1 tsp cumin-coriander powder, and 0.5 tsp Italian seasoning. Add the boiled white/navy beans and a splash of water (if needed for desired consistency). Simmer for a few minutes to allow flavors to meld.
  10. Finish the curry by stirring in 1 tsp butter. Garnish with spring onions.
