White Bean & Garlic Rice Recipe

Healthy, comforting, and full of flavor! This recipe combines fluffy garlicky carrot rice with creamy white beans curry made with a secret ingredient (cauliflower) that gives the curry its perfect thick texture. A wholesome vegetarian meal that’s high in protein and perfect for busy weeknights.
Instructions
- Heat 2 tbsp olive oil in a pot. Sauté the finely chopped garlic cloves until fragrant.
- Heat 2 tbsp oil in a separate pan. Sauté the chopped onion, ginger, and garlic until softened.
- Serve the hot White Beans Curry alongside the fluffy Garlicky Carrot Rice. Garnish with additional spring onions if desired.
- Add the chopped carrot and the 30-minute soaked white rice to the pot. Sauté for 2-3 minutes.
- Add the pulsed cauliflower and cook for 2-3 minutes.
- Add 1.5 cups water and salt to taste. Cover the pot and cook for 15 minutes.
- Then add the blended tomato and tomato paste. Cook for 5 minutes, stirring occasionally.
- Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before serving.
- Stir in 1 tsp salt, 1 tsp cumin-coriander powder, and 0.5 tsp Italian seasoning. Add the boiled white/navy beans and a splash of water (if needed for desired consistency). Simmer for a few minutes to allow flavors to meld.
- Finish the curry by stirring in 1 tsp butter. Garnish with spring onions.
